How do supermarkets capture feedback?

In a small shop (mom and pop store) the owner of the shop gets direct feedback from customers. For example, when a customer comes to purchase something and if that item is missing or sold out, the owner immediately is aware about this. Now the owner decides if he should order that item or not. 

My question is, how do supermarkets manage similar situations? In the supermarkets when some item is missing or sold out, most customers don't bother to ask the employees there, even if they ask the employees are not tracking any of this and therefore not passing this information to store manager or management?
